Abstract:  Event-by-event fluctuations in heavy-ion collisions are sensitive probes of the QCD phase structure and can be linked to first-principle calculations of conserved charge susceptibilities. Their dynamical description, however, remains challenging. I will discuss the issues affecting the interpretation of experimental measurements and present hydrodynamics based description of proton number cumulants and correlation functions at collision energies spanning LHC and RHIC-BES, as well as the baryon-rich regime probed by HADES. The experimental data at s_NN > 20 GeV are consistent with simultaneous effects of global baryon number conservation and repulsive interactions in baryon sector while additional mechanisms are required to describe the data at lower energies, one possibility being sizable attractive interactions among baryons.
